Tater Tote Casserole

For my craftsgiving or friendsgiving we did a casserole potluck. For my recipe I made a tater tot casserole. The original recipe is from here.

Ingredients:

  • 1 bag of frozen tater tots
  • 1 package of ground Turkey meat
  • 1/2 onion, diced
  • Salt and Peper
  • 1 can cream of mushroom soup
  • 1 can green beans
  • 2 cups of shredded cheddar cheese

Steps:

1. Preheat the oven to 350 degrees.

2. Brown the ground turkey and add onion in a skillet.

3. Add in the green beans and cream of mushroom soup into the ground beef.

4. Put the mixture into a baking dish.

5. Layer the tater tots and cheddar cheese on top of the mixture

6. Bake the casserole until the tater tots are golden brown and enjoy!

Chicken Lo Mein

Last night my husband made chicken lo mein, which happens to be one of my favorite foods. The recipe is from here and is super easy to make which is great for a weeknight dinner and there are always leftovers for the next meal!

Ingredients

  • Sauce (next time we make this we are going to double the sauce)
    • 3 Tablespoons of low sodium soy sauce
    • 3 tables hoisin sauce
    • 1 teaspoon sesame oil
  • Lo Mein
    • 1 package of Lo Mein noodles
    • 2 teaspoons olive oil
    • 1 teaspoon sesame oil
    • 1.5 tablespoons of minced garlic
    • 1 lb chicken
    • 1 cup shredded carrots
    • 1 cup snow peas
    • 3 cups fresh spinach

Steps:

1. Whisk the sauce ingredients together in a small bowl and set aside.

2. Boil water in a large pot. Add the lo mein noodles and cook until soft and drain the noodles.

3. In a pan add olive and sesame oils over medium heat. Cut up the chicken. Once the oil is hot add the garlic and chicken. Stir constantly until the chicken is fully cooked and remove from the pan.

4. Add the carrots and snow peas to the pan and cook until tender. Add the spinach, noodles, chicken, and sauce to the pan and stir until the spinach has wilted.

5. Enjoy!

Lana Del Rey + Agami

As a present for the paper anniversary my husband bought tickets to see Lana Del Rey at the Aragon Ballroom and made dinner reservations at Agami.

For Dinner we ordered the Ocean Drive roll and the Red Dragon roll. For dessert we had red bean and green tea Mochi. I also had a St. Garmin cocktail… or maybe two.

After dinner we walked over to the Aragon Ballroom and found a line that wrapped around a few blocks. Since it was cold out we went into an Asian market and then found the Fat Cat bar to grab a drink and wait for the line to die down. The line however didn’t die down so we sucked it up and waited outside. Once we got inside we found a spot to stand and enjoyed Lana Del Rey’s concert.

Somehow throughout the night my phone’s camera got dirty… so the pictures are less then perfect… oh well!

Tea at the Drake Hotel

Something my mother and I have done since I was a child is done a high tea in Chicago. We’ve tried a few hotels, but we found the best high tea is done at the Drake Hotel. This time my mother-in-law accompanied us.

I always go for my favorite tea, Earl Gray. We had scones and a cranberry loaf. There is a cucumber sandwich, a salmon mousse sandwich, a roast beef tea sandwich and a Thai spiced chicken salad tartlet. For dessert, there was a cream puff in the space of a swan, a French macaron, chocolate cake, and mini cheesecake. We always add a glass of pressco or champagne.

Turkey Stuffed Jack-O-Peppers

Yes, we made this a night early but that’s because this recipe makes enough leftovers for 3 full meals for each of us! We’re meal planners.

The recipe is from here but for an extra Halloween twist we decided to make them into jack-o-lanterns. Since I had to run some errands after work, my husband surprised me and craved the orange peppers! Sadly his turned out better then mine.

For the table setting, I used a target pumpkin, the cat place mats that I made on this post, the table cloth is extra fabric from Joann Fabrics, the plates are from a thrift store, the bats on the wall are cut outs I made with the Cricut, and the evermore banner is from Target a few years ago.

Florida Vacation

After finding out that Matt’s friends were getting married in Florida, Matt and I decided to take a few days for a vacation. When we booked our tickets before I switched jobs so I chose to work from home (or at least attempt to) while Matt and the guys went deep sea fishing.

On Friday we went to the Kennedy Space Center for the day! This is actually half the price per ticket compared to Disney or Universal. The Kennedy Space center was very knowledgeable and was surprisingly fun. We watched a quick film about the start to finish of putting Neil Armstrong on the moon. We then watched another short film about how the Atlantis was created which led into the original Atlantis hanging behind the projection screen. There was a bunch of interactive exhibits that test your ability to land a shuttle and use the robotic arm in space. And yes, to answer anyone’s question, Matt and I did go down the slide, it was fun!

After getting freshened up we went to a group dinner at the Chef’s Table. The restaurant featured Topas options. Matt and I split a bottle of red wine (after I had a glass of Rose), 3 mini beef wellingtons, squash filled raviolis (which did not survive long enough to get a picture of), and tuna.

On Saturday before the wedding we meet my aunt and uncle in Mount Dora for a craft show. I wasn’t sure what I was getting into when we agreed to go but it turns out it is the 4th largest craft show in the US. We ate lunch at Mexican place we found along the way and wondered the streets looking at all of the homemade goods and of course did some dog watching!

Saturday night we attended a beautiful wedding at the Sydonie Mansion. The grounds beauty makes up for the lack of air condition and it was the perfect wedding venue for the couple!

Planning for Florida

Matt and I have our 3rd and final wedding for the month of October and for 2019 this weekend! We flew to Orlando on Wednesday after work and Today I was suppose to work from home, but after spending half of the day trying to log in I gave up and used a vacation day. Since I am at the Airbnb by myself without a car I decided to use this time to work on the trip’s agenda poolside! Growing up my mom always created a trip agenda to get the most out of each trip. I use to think she was crazy until now. I actually find a sense of relief knowing what each trip has planned!

Natalia’s Wedding

Weddings

My middle school BFF got married last weekend and I helped her set up the wedding. The original wedding was planned outside and due to some last minute changes, she had to find a new venue. She was able to find a room for rent at a near by sport’s complex. I went with her the weekend before to see what we were dealing with. On Friday we set up as much as we could between the hours of 5:30 pm and 9:30 pm with a total of 6 people to help out. Saturday morning I went back to finish the set up and to make sure the cake could be delivered.

Most of the items used were from thrift stores, the dollar tree, and my personal décor collection. There was some items purchased from craft stores and Target as well.

Thrifted items: candles, most of the flowers, plates, candle stick holders, and the flowers and vases at the alter.

The ceiling lights were bought after Christmas at Target 2 years ago. I keep them on hand because you never know when they’ll come in handy! I also got the Mr & Mrs ballons from there as well.

The glasses were bought at the Dollar Tree! The frames for the signs were also from here along with some of the flowers.

The tulle, the silverware (which was plastic), the flower arrangement in between the candle stickers was created by one of the other friends of the bride (which she did an amazing job!) all came from various craft stores like Hobby Lobby, Michael’s and Joann Fabric.

The cake stand, the wooden Mr. and Mrs. signs, and the Processo bar sign came from my own personal décor. The table cloth’s came from the bride’s Aunt who had them in her home.

The fairy lights were given to me from my other friend who had gotten married. She bought them off of Amazon.

A Day in Denver

US Travel

My husband and I flew to Denver back in February to spend some time with our friends.

We flew out Friday afternoon and flew home Sunday morning.

Friday we found some local restaurant/pub to grab drinks and have dinner at and then went to VooDoo Donuts, which was amazing!

On Saturday we took a snowboarding class at the Loveland Ski Area, ate lunch there and headed back to our friends’ apartment for a nap. For Dinner we went to the Barcelona Wine Bar! We sat at the chief’s table and got to sample pretty much everything on the menu. The tapas was delicious and the dessert was incredible!

Oui Jar Makeover

Supplies: 
Oui Jar (make sure it’s clean and has no stickers) 

Paint + Paint brush

Painters tape

Mod Podge

Glitter

Candle or flower


Steps: 

1. After making sure the Oui Jar is clean, use painters tape to tape off the part that you want the paint and the glitter to be.

2. Paint the jar and let the jar dry.

3. Paint the modge podge on where the paint is and dip in glitter. Let dry.

4. Take the painters tape off the jar.

5. Put a candle in the jar and enjoy your new glitter jar! Or you can use them as a mini vase
