Tuna Dinner
Tonight my husband made pan seared tuna from this recipe! It was amazing!

Salmon Wellington
Today was a rare day where I took over the kitchen from my Husband. I decided try making Salmon Wellington and am really happy with the results!

For the potatoes I drizzled olive oil on them with some sea salt and parsley! I cooked them in the oven for the same time and heat as the salmon.
Mini Cheesecakes!
To make these you will need
Look at how cute these mini cheesecakes are! They are the perfect light dessert in the right size. I made these for my coworker’s birthday since she loves cheesecake. When making treats for work I always try to make something that’s easy to grab.
• Muffin tin
• Cupcake liners
• 1 pound or 16 ounces of cream cheese (I used reduced fat cream cheese)
• ¾ cup of sugar
• 2 eggs
• 1 tablespoon of lemon juice
• 1 teaspoon of vanilla
• Vanilla Wafers (I used reduced fat ones)
First you want to preheat the oven to 350 degrees. Then you will mix the cream cheese, sugar, eggs, lemon juice, and vanilla in the bowl for around 5 minutes. Since I used my kitchenaid I put the cupcake liners in the muffin tin while the batter was mixing. Put a vanilla wafer on the bottom of each cupcake liner. Put 1 spoonful of batter in each cupcake liner. Bake the batter for about 15 minutes or until the batter is set. Once the mini cheesecakes are out of the oven and cooled, refrigerate them until being severed!
Orange Sesame Ginger Glazed Salmon
Last night my husband made orange sesame ginger glazed salmon and it turned out amazing! We served it with sugar snap peas and brown rice.
Ingredients on the original recipe is for 4 servings but we make it for the two of us.
- Salmon filets (we used the precut ones from the seafood counter at Jewel)
- Salt
- 1/3 cup orange marmalade
- 1/4 cup low-sodium soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon ginger powder
- 1/2 teaspoon minced garlic
- 1/4 teaspoon of red pepper flakes
- 4 green onion chopped up
Instructions:
Preheat the oven to 350 degrees.
Place salmon in a glass baking dish.
In a small bowl mix the orange marmalade, soy sauce, sesame seed oil, ginger powder, garlic, red pepper flakes. Put half of the mixture over the fish and bake for 10 minutes. After the 10 minutes is up, take the salmon out and put the other half of the mixture over it. Bake again for 10 minutes.
We used a rice cooker for the brown rice and Matt cooked the peas in a pan on the stovetop.

Fat Tuesday
For Fat Tuesday I wanted to be reminded of my honeymoon in New Orleans. So I decided to make beignets. I’ve never fired anything before so I thought I would try baking them. Half of them were baked with the hopes that they would puff up. That didn’t happen. Since the baked ones were already hard, I tested frying on them. I fired the rest of the beignets and got some pretty good ones! They work best if you stick closely to the 1/8 inch thickness.
Last Night’s Dinner
For dinner my husband made lemon-pepper tilapia with mushrooms. We got the recipe from here: https://www.tasteofhome.com/recipes/lemon-pepper-tilapia-with-mushrooms/. The recipe calls for putting the seasoning on the fish while you cook, which we found out the seasoning gets unevenly spread by doing this. Next time we will create a rub to marinate the fish in.

Food Day
Three of My Favorite Words: Office Food Day.
For birthdays we go all out and do treat tables. For this food day we are celebrating two birthdays, including my amazing boss’s birthday!
My boss is doing weight watchers, so I’m making these weight watcher friendly chocolate peanut butter balls but am being a bit extra and making them look like cats. I got the receipt from here https://www.wwsmartpointsrecipes.xyz/2016/02/peanut-butter-balls-smartpoints-2_26.html off of Pintrest. As you can see the piping bag ripped due to the white chocolate being too hot so there was only a few with cat whiskers.
I usually make cupcakes but my coworker requested orange cranberry muffins. Since I was on a time crunch I used Krusteaz’s mix.
Easy Salmon Dinner
Ingredients:
Tonight is one of those nights where I have a million and one things to do for 3 upcoming events. So instead of getting fancy with dinner we just cooked salmon and served it with a side salad of spinach drizzled with poppy seed dressing.
- Salmon
- Lemon Juice
- Spinach
- Dressing
Steps:
- Preheat the oven to 425 degrees
- Cook the salmon in for 15 minutes.
- Plate the salmon
- Drizzle lemon juice on the salmon to your liking
- Plate the spinach and add the dressing
- Enjoy your 20 minute dinner!
